This sauce is a great accompaniment for Chicken Souvlaki or Big Spring Jam Greek Chicken Salad. If you don’t care for yogurt tyr substituting low-fat sour cream.
1 seedless cucumber, grated
salt, for sprinkling
2 cups low fat Greek yogurt
2 tsp lemon juice
2 cloves garlic, finely minced or pressed through a garlic press
1 tsp dried dill
1. Place the grated cucumber in a colander and sprinkle with salt. Allow to drain for 30 minutes, then squeeze the moisture out of the cucumber.
2. In a medium bowl, combine the cucumber with all the remaining ingredients.
3. Refrigerate for 30 minutes or longer to allow the flavors to blend.
