Any cut of steak can be used for this recipe. If you don’t have a meat grinder, choose a well marbled steak from the meat case and ask a friendly butcher to grind it for you. Ground sirloin is not the same.
1 pound New York strip steak, freshly ground
1 pound ground chuck
1 tsp seasoned salt
1/2 tsp black pepper
1/2 cup cold water
2 Tbsp canola oil
1. In a large bowl, combine the ground steak, ground chuck, seasoned salt, pepper,water, and canola oil. Mix well, but use a gentle hand so as not to compress the meat.
2. Form into 8 equal patties, making a depression in the center of each. ( If you make the center of each burger thinner to start with they won’t turn into hockey pucks.)
3. Grill over medium heat to the desired temperature.
