Bella and Lizzie’s Ground Beef Dinner

This recipe makes enough for 3 days @1272g per day. Bella gets 75% = 959g for 1316 calories. Lizzie gets 25% = 318g for 439 calories.

797g beef, ground, 85% lean meat / 15% fat, cooked, pan-browned
6.6g canola or vegetable oil
465g peas and carrots, frozen, steamed, without salt
2121g Rice, brown, long-grain, cooked
425g part-skim ricotta cheese

1. In a large skillet, brown the ground beef until fully cooked and drain excess fat.
2. Cook the brown rice per package instructions without any added salt.
3. Steam the peas and carrots without any added salt.
4. Once cooked, measure out the beef, brown rice, peas and carrots, and ricotta in the amounts above. Place the brown rice in a serving bowl and add the beef, peas and carrots, oil, and the ricotta. Mix well and serve.
