I think these little burgers taste a lot like the original Krystal Burgers, but they’re much more substantial. If you don’t grind your own meat substitute 2 Tbsp. grated onion for the 1/4 cup chopped onion.
18 oz home-ground chuck
1/4 cup chopped onion
3/4 tsp kosher salt
1/4 tsp pepper
1/4 cup water
1/4 cup minced onion
12 whole wheat slider buns
6 slices American cheese
1. Grind together the chuck roast and chopped onions. With a fork, lightly stir in the salt, pepper, and water.
2. Divide the ground chuck mixture into 12 portions and form into very thin 2 1/2 inch patties. Sprinkle evenly with the minced onion, pressing the onion into the meat.
3. Heat a flat-top cast iron grill or iron skillet over medium heat. Starting with the onion side down first, grill the patties about 2 minutes on each side, or until just cooked through. Do not over-cook. Top each with 1/2 slice of cheese and remove to buns.
4. If desired, serve topped with yellow mustard and dill pickle slices.
