Up the fiber and nutrition in this all purpose Mexican beef filling by sneaking in a little oat bran. You’ll stretch your budget as well.
1 pound ground chuck
1/4 cup finely minced onion
2 Tbsp oat bran
1 recipe taco seasoning
1 cup beef broth
1. In a medium saucepan, brown beef and onions until beef is no longer pink and onions are soft.
2. Add oat bran and taco seasoning. Cook and stir a minute or two.
3. Gradually stir in the beef broth and continue to cook, stirring frequently until thickened.
