One doesn’t really need a recipe for this breakfast treat. I try not to indulge too often, because the taste far outweighs it’s nutritional profile.
1 tsp butter
1 extra large egg, well beaten
1 slice American cheese
2 slices bacon, cooked and drained
2 slices whole wheat bread, toasted
1. In your smallest skillet over medium low heat, melt the butter. Pour in the egg and sprinkle with a little salt and pepper. Cook the egg with out disturbing until nearly set, then flip.
2. Immediately top the egg with the slice of cheese. With a spatula, fold the exposed edges up over the cheese to form a square.
3. Slide the egg and cheese onto a piece of toast and top with the bacon, breaking the bacon slices in half to make 4 pieces. Complete the sandwich with the last piece of toast and enjoy.
