Low Fat Bran Muffins

If you like, toss 1/2 cup chopped nuts or diced cooking apple into the dry ingredients just before folding in the cereal mixture.

1 cup whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1 3/4 cups Fiber One bran cereal
1 1/4 cups 1% low-fat milk
1/3 cup firmly packed brown sugar
1 large egg
1/2 cup applesauce, unsweetened
1 cup raisins

1. Preheat oven to 400.
2. Mix flour, baking powder, baking soda and cinnamon in a large bowl. Mix cereal, milk, sugar and raisins in another bowl; let stand 10 minutes, then stir in egg and applesauce. Add to flour mixture; stir just until moistened. Batter will be lumpy.
3. Spoon batter into muffin pan sprayed with no stick cooking spray, filling each cup 2/3 full.
4. Bake 18 to 20 minutes or until golden brown. Serve warm.
