Have a hot and fresh breakfast ready to go in about two minutes! If you like, add fresh spinach or top with salsa. Use pre-cooked bacon or sausage in place of the ham.
1 6 inch corn tortilla
1 extra large egg
2 thin slices deli ham
1 Tbsp shredded cheddar cheese (or more to taste)
1. In a microwave safe mug, curve a tortilla into the side of the mug. Lay the mug on its’ side with the curve of the tortilla on the bottom. Microwave on high for one minute, or until crisp. Remove the taco shell from the mug.
2. Lightly spray the mug with cooking spray. Add the egg and beat well. Microwave on high for one minute.
3. Lay the ham in the taco shell. Add the cooked egg and salt and pepper to taste. Top with the shredded cheese.
