1 Tbsp butter
3 extra large eggs
sea salt and freshly ground pepper to taste
1. In a small non stick skillet over medium low heat, melt the butter until the foam subsides.
2. Whisk together the eggs and 1 Tbsp water and gently pour over the melted butter. Sprinkle with sea salt and freshly ground pepper to taste.
3. Cook without stirring until the bottom begins to set, then draw a spatula across the bottom of the pan to create large curds. When most of the eggs are set cover the skillet and turn off the heat. Let stand for just a couple of minutes to finish.
