Chicken Burgers

Full of fresh flavors, Chicken Burgers can be grilled for a change from your everyday hamburgers. It helps to have them well chilled before placing them on an oiled grill to prevent the patties from sticking and falling apart. If you prefer, lightly flour the patties and pan fry, then make a sauce from chicken broth.

1 tsp olive oil
1 small onion, finely diced
2 tsp minced garlic
1/2 cup red bell pepper, finely diced
2 small carrots, shredded
1 cup fresh mushrooms, diced
1/2 cup tomato, seeded and chopped
2 lbs ground chicken breast
1 extra large egg
1/2 cup fresh bread crumbs
1 Tbsp Cavender’s Greek Seasoning
1/4 tsp kosher salt
1/4 tsp black pepper

1. In a large skillet, heat the olive oil over medium heat. Saute the onion with the garlic first, then add the bell pepper and carrots, and then the mushrooms and tomatoes. Cook until all are just softened. Set aside and allow to cool completely.
2. In a large bowl, combine the chicken and vegetables. Add the egg, bread crumbs and seasonings to taste. Mix all together well and form into 8 patties with a depression in the center. Chill.
3. Grill over medium heat for 5 to 6 minutes per side, or until cooked through.
