Chicken Salad

Since you need cooked chicken to make chicken salad, why not make a pot of Rich Chicken Stock in the process? Let the chicken cool if you like cubes of chicken or shred and chop the meat while it’s warm if you prefer a finer texture.

1/2 cup light mayonnaise
1 tsp sugar
1 tsp lemon juice
1/2 tsp kosher salt
1/2 tsp black pepper
1/4 tsp celery salt
1/2 tsp dried dill
1/3 cup diced celery
1/3 cup diced red bell pepper
1/4 cup diced onion
2 cups cooked chicken, shredded or cubed

1. In a medium sized bowl, combine all the ingredients except the chicken and mix well. Stir in the chicken.
2. Serve over a mixed green salad or as a sandwich or wrap.
