Thanksgiving Turkey Salad

Make Thanksgiving Turkey Salad any time of year! I’m always looking for ways to use turkey, and adding dried cranberries gives this salad a festive kick. This is good as a salad or in a sandwich.

1/2 cup light mayonnaise
1/4 cup light sour cream
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp fresh lemon juice
1/3 cup green onion, thinly sliced
1/2 cup celery, thinly sliced
1/3 cup pecans, finely chopped
2/3 cup dried cranberries
2 cups roasted turkey breast, cubed

1. In a large bowl, combine the mayonnaise, sour cream, salt, pepper, and lemon juice. Mix well, then stir in the remaining ingredients.
2. Chill a couple of hours to allow the flavor to develop.
