Better Box Cake

This is an easy way to upgrade any boxed cake mix. I think it’s as good or better than any scratch cake I have made. If you don’t have coconut oil, just use all butter.

3 extra large eggs, room temperature
1 1/4 cup milk
1/4 cup butter, melted and cooled
1/4 cup coconut oil, melted and cooled
1 box pudding style cake mix

1. In a large bowl, lightly beat the eggs. Add the milk, butter, and coconut oil. Beat to combine well.
2. Add the dry cake mix. With an electric mixer on low speed, beat all together until smooth. Increase the speed to medium and beat two minutes longer.
3. Pour into prepared pans and bake according to the instructions on the box.
