As easy as they are decadent, Cannoli Cones are best assembled just before serving. The cones can be dipped in chocolate and set aside, ready to fill as needed.
1 cup fresh ricotta cheese
1/2 cup powdered sugar
1/2 cup heavy cream
1 tsp Amaretto liqueur or vanilla extract
1/4 cup mini chocolate chips
1/2 cup bittersweet chocolate morsels
6 sugar cones
1. In a large bowl, stir together the ricotta and powdered sugar until combined. Add the cream, Amaretto, and mini chocolate chips, blend until smooth and light, and set aside.
2. In a very narrow microwave safe bowl or small glass measuring cup, microwave the bittersweet chocolate according to the package directions until smooth. Invert each sugar cone and dip the opening into the chocolate, then allow the excess chocolate to drip back in before propping up each cone in a small glass to dry.
3. When ready to serve, carefully fill each cone with the ricotta filling. (A pastry bag or large zip type bag with a corner snipped off is helpful.) If desired, decorate each cone with a few more mini chips.
