So simple, Dark Chocolate Mint Brownies start with a mix. Adjust the peppermint extract to suit your taste.
1 box dark chocolate brownie mix
1/4 cup butter, room temperature
2 cups confectioners sugar
1 1/2 Tbsp cream
3/4 tsp peppermint extract
3 drops green food coloring
2/3 cup dark chocolate morsels (I use Ghiradelli)
3 Tbsp butter
1 1/2 tsp vanilla extract
1. In and 8 inch square pan, prepare the brownie mix according to package directions. Cool completely.
2. In a medium bowl, prepare the filling: Beat together the softened butter and confectioners sugar. Add the cream as needed to get a spreadable consistency. Stir in the peppermint extract and food coloring. Spread the filling over the cooled pan of brownies and chill 15 minutes or more.
3. In a microwave safe bowl, prepare the topping: Microwave the chocolate morsels and butter, stirring every 20 seconds, until smooth. Stir in the vanilla. Pour over the brownies and quickly spread into an even layer.
4. Cool until firm, about 10 minutes, then cut into squares to serve.
