Fresh Fruit Cobbler


You can use frozen fruit instead of fresh, but it needs to be thawed first or the cake-like portion of the cobbler won’t bake well.

1/2 cup butter
1 cup sugar
1 cup all- purpose flour
1/2 tsp salt
2 tsp baking powder
1 Tbsp vanilla extract
1 cup 1% lowfat milk
4 cups sliced peaches or blueberries

1. Place the butter in a 9×9 inch baking dish in the oven and heat to 350°
2. Mix the remaining ingredients except the peaches (or any fresh fruit) into a batter. When the butter has melted, pour the batter on top, then add the peaches. DO NOT stir.
3. Bake 45 minutes, or until the cobbler is golden.
