Cajun Pork and Cabbage

This slightly spicy casserole is similar to stuffed cabbage, but much easier to prepare. If you prefer, you may use ground beef in place of the pork. A mixture of the two meats is nice, as well.

1 1/2 lb ground pork
1 medium green pepper, chopped
1 medium onion, chopped
2 large serrano peppers, finely diced
2 garlic cloves, minced
1 10 oz can diced tomatoes and green chilies
1 8 oz can tomato sauce
1/2 cup uncooked converted brown rice
1 tsp salt
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 to 1/2 tsp each black and cayenne pepper
1 small head cabbage, chopped

1. In a skillet, cook the pork, green pepper, onion, serrano peppers, and garlic over medium heat until meat is no longer pink. Stir in the tomatoes, tomato sauce, rice and seasonings.
2. Spread the meat mixture into an ungreased 13×9-in. baking dish. Top with the chopped cabbage. Cover and bake at 350° for 65-75 minutes or until the rice is tender.
