Another version of grilled pork tenderloin, this one is both sweet and spicy. You can adjust the amount of chipotle chile powder to suit your taste, but don’t try to substitute regular chili powder. You won’t get the same result.
1 Tbsp chipotle chile powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
2 Tbsp brown sugar
2 tsp canola or olive oil
1 1/2 pound pork tenderloin, trimmed of fat & membranes
1. Preheat grill for medium high heat.
2. In a small bowl, combine all the spices. Rub the pork well with the oil, then rub in the spice mix. If any spice mix remains pat it on top. Let the meat stand 20 minutes or wrap in plastic and refrigerate for a few hours.
3. Lightly oil grill grate, and place meat on grate. Cook for 20 to 30 minutes, turning meat every 5 minutes. Remove from grill, cover with foil, and let stand 5 to 10 minutes before slicing.
