When you make your own Italian sausage you are in control. The fat content and spice levels are up to you, especially if you grind your own pork.
1 1/2 tsp poultry seasoning
1 tsp garlic salt
1 tsp dried oregano
1 tsp fennel seed
1 tsp red pepper flakes
1 pound ground pork
1. Combine all the spice ingredients in a small bowl.
2. In a large bowl, toss the spices into the ground pork using a fork to mix thoroughly but gently.
3. Let stand at least 30 minutes for flavors to blend.
