Beer batter is very versatile. Use it on anything you chose to deep fry. The secret to keeping fried foods from being greasy is to control the temperature of the oil. Heat the oil to the proper temperature to start with, usually about 360°, and do not introduce too much food at one time. Overloading the fryer drops the temperature of the oil and produces greasy food.
1 cup all-purpose flour
1 tsp baking powder
1 tsp salt
1 cup warm beer
1 extra large egg
1. In a large bowl, combine the flour, baking powder, and salt.
2. Mix together the beer and egg, then stir the liquids into the dry mixture, making sure there are no lumps.
3. Shake the food that is to be battered in a little flour or cornstarch first and the batter will coat it better.
