Big Bob Gibson’s is a famous barbecue restaurant in Decatur, AL. They use this sauce to baste chicken while they smoke it, but also use it as a dipping sauce and dressing on other menu items. The only change I made to Mr. Gibson’s recipe was to substitute light mayo, cutting the calories by more than half.
1/2 cup light mayonnaise
1/4 cup vinegar
1/2 tsp prepared horseradish
1/2 tsp salt
1/2 tsp black pepper
1/8 tsp cayenne pepper
1 Tbs sugar
1/2 tsp lemon juice
2 Tbs apple juice
Combine all ingredients in bowl and mix well.
Servings: 8
Yield: about 1 cup
