Butterscotch Sauce

This simple dessert sauce goes well over just about anything sweet, from cake to ice cream.

2 Tbsp butter
1/2 cup light brown sugar, packed
1/2 cup heavy cream
1 tsp vanilla extract

1. In a small heavy saucepan over medium heat, melt the butter then stir in the brown sugar until the mixture becomes frothy looking.
2. Add the cream and stir constantly until just slightly thickened, about 5 minutes.
3. Cool to room temperature before stirring in the vanilla.

Servings: 8
Yield: About 1 cup
