You’ll never miss the fat, but your waist-line will!
12 ounces fat-free evaporated milk
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/2 cup 1% milk
2 tablespoon cornstarch
2 ounces Neufchatel, cubed
2 ounces freshly grated Parmesan cheese
1. Place the evaporated milk, garlic powder and cayenne in a medium saucepan and heat until steaming.
2. Combine the cold milk and cornstarch, stirring well to incorporate the cornstarch, then stir into the steaming milk. Cook, stirring constantly, until thickened. Stir in the Neufchatel and then the Parmesan.
