I can never resist planting tomatoes every summer and I always grow some form of Romas for cooking. This sauce is a very basic tomato sauce that can be used in any recipe. The ingredients can easily be adjusted for any amount of tomatoes.
4 cups tomatoes, peeled and seeded
2 tsp olive oil
1 tsp salt
1 tsp sugar
In a wide saucepan, combine all ingredients. Bring to a boil over medium heat, then reduce the heat to low and cook, covered, for 15 minutes. Uncover and simmer until the sauce has reduced by half. Stir often.
Yield: 2 cups
