Broccoli Parmesan

Tired of the same old Broccoli and Cheese? Try this light and satisfying dressed up bunch of broccoli.

16 oz fresh broccoli flowerets
2 Tbs butter
3 Tbs chopped onion
2 Tbs all-purpose flour
1 cup chicken broth
1/2 cup heavy cream
4 oz freshly grated Parmesan cheese
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dry mustard

1. Rinse and drain the broccoli and place in a microwave safe bowl. Add 1 Tbsp water, cover with plastic wrap, and set aside.
2. Melt the butter in a heavy saucepan; add onion, and sauté until tender. Add the flour, stirring until blended. Cook, stirring constantly, 1 minute. Gradually add the chicken broth and cream. Cook over medium heat, stirring constantly, until thickened and bubbly.
3. Microwave the broccoli 3 to 4 minutes on high or until crisp-tender. Let stand 1 minute.
4. While the broccoli is cooking, stir the 1/2 cup cheese and next 4 ingredients into the sauce. Pour over the broccoli. Sprinkle with additional cheese, if desired.
