Cauliflower Tomato “Grits”

Not low-fat, but defiantly low-carb at only 9 grams per serving.

1 large head cauliflower, grated
2 Tbsp butter
1/2 cup sliced green onions (about 4 onions)
4 oz Velveeta Cheese, cubed
1/4 tsp garlic powder
1 cup sharp cheddar cheese, shredded (4 oz)
1 10 oz can Ro-Tel tomatoes
2 extra large eggs, lightly beaten

1. Preheat the oven to 350° and lightly grease a 2 quart baking dish.
2. In a large microwave safe bowl, combine the cauliflower and 2 Tbsp. water. Cover tightly and microwave on high for 8 minutes, stirring half way through. Let stand 5 minutes.
3. Mix in the remaining ingredients, stirring well.
4. Transfer the cauliflower into the prepared baking dish.
5. Bake for 40 minutes.
