Grilled Asparagus

Grilled Asparagus is so easy you don’t need a recipe. I’m including this one just so I won’t forget it when I’m browsing for vegetable choices.

1 pound asparagus, trimmed
2 Tbsp olive oil
coarse salt and freshly ground black pepper

1. Soak two bamboo skewers in water for 30 minutes, or use metal skewers if you have them. Meanwhile, prepare your outdoor grill or heat a grill pan.
2. Toss the asparagus in the oil and line the spears up parallel to each other so they look like a raft. Now comes the hard part. Carefully insert the two skewers through all the spears, placing them about a quarter of the way from each end. Sprinkle the asparagus raft with coarse salt and pepper to taste.
3. Grill the asparagus for 5 to 7 minutes on each side, or until as tender as you like. If desired, serve with a squeeze of fresh lemon.
