My Low-Carb Mixed Potato Mash does have some potato in it, but it’s mainly cauliflower. I think mixing the two gives you the texture of real mashed potatoes, but substituting in the cauliflower reduces the carbs.
1 medium russet potato, about 8 oz.
1 medium cauliflower, about 1 pound
4 oz Neufchatel cheese, softened
1/2 tsp salt
1/2 tsp black pepper
1. Peel and cut the potato into large chunks, then place in a medium pot of cold water. Bring to a boil. As soon as the water begins to boil, add a good amount of salt. Boil until the potato is tender, then drain the potato but return it to the pot and shake over medium heat to dry. Place the potato in the bowl of a food processor or large bowl.
2. Cut the cauliflower into florets and place in a microwave safe container. Add 2 Tbsp. of water and cover with plastic wrap. Microwave on high for 4 minutes, then stir and return to the microwave until tender. Drain and add to the food processor.
3. Cube the cream cheese and add to the bowl along with the 1/2 tsp each of salt and pepper. Process or mash until very smooth and creamy.
