Salsa Rice is an easy side dish to accompany any Mexican meal.
3/4 cup converted brown rice
1 cup chicken broth (or beef or vegetable)
1/2 cup salsa, preferably fresh
1. In a small saucepan, combine all ingredients and bring to a boil.
2. Cover, reduce heat to medium low, and simmer for 30 minutes.
3. Turn off heat and let stand 5 minutes.
4. Stir to mix before serving.
