UnPotato Salad

If you are not strictly controlling your carbs, try boiling one potato and mashing it into the dressing ingredients before adding the cauliflower.

1 head cauliflower, chopped
2 cups celery, diced
1 cup sweet onion, diced
1 1/2 cup light mayonnaise
2 oz dill pickle relish
2 tsp kosher salt
1 tsp pepper
4 large eggs, boiled & chopped

1. Place cauliflower and 2 Tbsp. water in a microwave safe dish and cook on high, covered, until just tender. Spread on a double layer of paper towels to cool completely.
2. Meanwhile, prepare and mix together the remaining ingredients.
3. Add the cooled cauliflower and toss to combine.
