Eat as much as you like! Each serving is only 86 calories but 6 grams of fiber.
2 cups freezer tomatoes, or 1 15 oz can diced tomatoes
4 oz chopped green chilies
1 or 2 medium jalapeño peppers, minced
1/2 large onion, diced
1/2 medium cabbage, chopped
1/4 lb baby carrots, sliced
2 stalks celery, sliced
1/4 lb mushrooms, sliced
2 Tbs fresh parsley, chopped
8 oz cut green beans
1 envelope Lipton onion soup mix
1/2 tsp pepper
1. In a large Dutch oven, combine all ingredients. Add enough water to cover.
2. Bring to a boil then reduce heat, cover and simmer until the veggies are tender, stirring occasionally.
