Aaron’s Pimento Cheese is really versatile. Besides making a great sandwich, it’s good spread on crackers or in celery sticks. I use light mayo in mine, but use the “real” stuff if you prefer.
1 cup light mayonnaise
1 7 oz jar diced pimento, drained
1/2 tsp freshly ground black pepper
1 pound cheddar cheese, finely shredded, (4 cups)
1. In a large bowl, stir togather all ingredients until well blended. Transfer to a storage container with a good seal and chill.
2. If time allows, refrigerate for several hours to allow the flavors to blend before serving.
Servings: 20
Yield: about 5 cups
