Anytime you make baked potatoes save the tops for Baked Potato Skins. If you haven’t saved any potato skins you can bake a few potatoes, cut them in half, and reserve the scooped out potato for another use.
8 potato skins
2 oz cheddar cheese, shredded
3 slices bacon, cooked until crispy and crumbled
1 green onion, sliced
1/4 cup light sour cream
1. Preheat the oven to 400°. Arrange the potato skins on a baking sheet.
2. Divide the cheddar cheese among the potato skins and sprinkle with the bacon.
3.Bake the potato skins until the cheese melts, then remove from the oven.
4. Top with the sour cream and green onions. Serve immediately.
