Guacamole for Two

Avocado is a good fat, just don’t over-do it. This recipe should really serve four, but I won’t tell if you won’t!

1 large ripe Hass avocado
1 Tbsp low-fat sour cream
1 Tbsp fresh tomato salsa
1/4 tsp garlic salt
1 tsp lime (or lemon) juice

1. Into a small bowl, scoop the flesh of the avocado and mash with a fork until slightly chunky.
2. Stir in the remaining ingredients. Taste for seasoning; a little more salt may be needed.
3. Guacamole is best prepared at serving time, but if you need a little more lead time press a piece of plastic wrap directly onto the surface, eliminating all of the air which causes browning.
