Southern Caviar

This savory snack is first cousin to “Georgia Caviar”. I serve it with scoop style tortilla chips.

2 15 ounce cans black-eyed peas, drained
1 15 ounce can black beans, drained
1 15 ounce can whole kernel corn, drained
1 10 oz can Ro-Tel tomatoes
1 7 oz jar diced pimento
1 large red bell pepper, diced
1 medium Vidalia onion, diced
4 large jalapeño peppers, seeded and diced
1 8 oz bottle Italian dressing (Sweet Vidalia Onion dressing is good if you can find it)

At least 2 hours before serving, combine all ingredients in a large bowl. Cover and refrigerate.
