A Watched Pot Never Boils

But once it does, watch out!
Whenever a recipe calls for a full rolling boil, especially with syrupy productd like candies or jams, make sure that pot is large enough to avoid a boil-over.
If you notice the contents getting too close to the top the best thing you can do is immediately cut off the heat and remove the contents to a larger pot before proceeding. Having to take this evasive action can sometimes effect the finished product, so it’s best to start with a larger pot to start with.
If you do experience a boil-over, immediately turn off the heat, move the offending pot, and cover the spill with wet paper towells. Once an untreated spill cools, it can be very difficult to remove.
