No cake flour in the pantry? I quit buying cake flour. I just didn’t use that much that often and got tired of storing the nearly full boxes. Those boxes just took up space until they went bad. Stashing the flour in the freezer didn’t help, either. It just took up valuable freezer space.
Finally I got smart and found a substitute. For every cup of cake flour replace two tablespoons of all purpose flour with cornstarch. That’s it! The only tricky part is that you have to be sure to sift it at least three times to combine, lighten, and aerate the flour or it won’t perform the same.
To make it easy on yourself, start by putting the two tablespoons of cornstarch in the bottom of your one cup dry measuring cup, the level off the cup with the all purpose flour and sift away.
