The easiest way I know to core an apple before slicing or dicing is to use a good quality mellon baller. (Mine is made of metal.)
Just cut the apple in half from stem to end, then use which ever end of the mellon baller fits best to scoop out the core.  I then use a small paring knife to clean out the stem and end.
