Gravy Math

Making gravy is simple if you follow this formula:

1 Tbsp fat
1 1/2 Tbsp flour
1 cup broth

Cook your fat and flour together for 2 minutes, then gradually whisk in the broth. This will make a medium thick gravy. If you prefer a thicker gravy increase the flour to 2 Tbsp. per cup of broth.

Servings……Fat………..Flour….Broth
6………….2 Tbsp………3 Tbsp….2 cups
8………….2 1/2 Tbsp…4 Tbsp….2 2/3 cups
10…………3 Tbsp……..5 Tbsp….3 1/3 cups
12…………4 Tbsp……..6 Tbsp….4 cups

You can also make a slurry by blending together 2 Tbsp flour and 3 Tbsp then add this mixture a little at a time for additional thickening.
