Main dish or side dish, your choice! This salad is an especially refreshing meal on a hot summer day. Omit the bacon to make it truly meatless, or add grilled chicken or shrimp if you’d like.
2 oz fresh baby spinach
1 extra large egg, hard boiled, sliced
1 oz fresh mushrooms, sliced
2 slices bacon, cooked until crispy and crumbled
1/2 oz walnuts
1 Tbsp dried cranberries
1/2 oz Feta cheese, crumbled
2 Tbsp My Buttermilk Dressing
Simply place the spinach on a large plate or bowl, pile on the rest of the ingredients however you like, and top with the dressing.
