This is really a cross between a conventional taco salad and super nachos. It doesn’t come in a big fried tortilla shell, but on a small layer of scoop style tortilla chips. Build your own taco salad out of your choice of toppings, and leave off the meat if you prefer.
2 oz tortilla chips
1 cup Simple Refried Beans
1 cup Taco Seasoned Beef
2 cups shredded lettuce, not iceberg
1/2 cup diced fresh tomatoes
1/2 cup diced Vidalia onion
1/2 cup pepper jack cheese, shredded
sour cream, guacamole, or salsa as desired
Spread the tortilla chips on a dinner plate. Top with the warmed beans and beef, then with your choice of the remaining ingredients in any order you like.
